Vegan Wacky Cupcakes with Cocoa-dusted Vanilla Frosting


This week's creative endeavor comes in edible form: Cupcakes for my coworker's birthday.


This moist chocolate cake is known as wacky cake, depression cake, crazy cake, or war cake. (I even had an aunt who called it poor man's cake.) Regardless of which name you use, it is a recipe that does not require eggs or dairy, which is why it was popular during the Great Depression when those items were in short supply. Considering the current price of eggs, perhaps we'll see it making a comeback!




This week's song selection is Joni Mitchell's "The Circle Game", which has been going around and around in my head (how appropriate) and also seems to tie in with Heather OC's poem this week. I love synchronicity!
